500g plain flour, 5 eggs (room temperature), ½ tsp salt, 4 tablespoon extra virgin olive oil, plain flour to dust, 4 rashers of bacon, 1 x large brown onion, 400g mushrooms, 300ml cream, parmesan to garnish.

In a mixer combine flour, salt, eggs and mix on a low speed until the mixture combines, then drizzle in 2 tablespoons of olive oil. Remove pasta from mixer onto a lightly floured benchtop.

Knead gently for 1 min. Cut pasta into 4 pieces and using a pasta machine roll out pasta into thin sheets, thinner until the set is at number 2.

Once rolled, use the thickest cutter setting on the machine then lightly flour the pasta after it is cut to prevent it from sticking. Place a medium pot of water onto boil with a pinch of salt added.

Cutting bacon into thin strips, dice the onion, then in a preheated large pan, add 2 tablespoons of olive oil and onion and cook until tender.

Add bacon and cook until slightly brown then add mushrooms and when they are fully cooked, add cream, turn down heat and simmer until cream has reduced by half. Season with salt and pepper.

Place pasta into boiling water and cook for 4 minutes or until al dente. Drain pasta well and add to sauce. Serve with garnish of fresh shaved parmesan.
