6 egg whites, 330g caster sugar, 1 large mango, 2 peaches, strawberries, raspberries, blueberries, and 400ml cream.

Preheat oven to 150°C.

Place egg whites in a bowl then whisk on high until soft peaks form. Mix in sugar slowly until combined then mix again on high until glossy and stiff peaks form.

Line a baking tray with grease proof paper. Spoon all the mixture onto tray in a circle.

Place in oven and bake for 1.5 hours or till outside if dry and firm.

Place blueberries in small saucepan with ¼ cup of water and a tablespoon of caster sugar, bring to boil and simmer 2-3 minutes.

Blend until smooth then cool in fridge. Slice the mango, peaches and strawberries.

Oil pan then fry off peaches and mango just until it starts to colour, turn over then cool in fridge.

Whip cream with a teaspoon of caster sugar. Spread over the top of the Pavlova, then garnish with grilled and fresh fruit.

Drizzle over the blueberry mix and serve.
